Mince Pies – Christmas Recipe – Xmas Fun

  1. 25g Caster sugar
  2. 1 Beaten egg
  3. 225g Plain flour
  4. 50g unsalted butter
  5. Pinch of salt
  6. Water

  1. 8 oz plain flour
  2. 2 oz unsalted butter
  3. Pinch of salt
  4. 5 oz Caster sugar
  5. 1 Beaten egg
  6. Water

Method

Sift the flour into a large bowl, cut the butter into dices and add to the meal.

Rub the mixture using your fingertips until the mixture attains a bread crumbs consistency.

Add a pinch of salt followed by three tablespoons of water and mix to form a firm dough, add water in bits, if necessary.

Briefly and gently knead the dough on a floured surface until it is smooth.

Wrap the mixture using a cling film and leave it to rest in a cool, dry place for half an hour before you can begin to roll it out.

Roll the pastry dough to 3mm thickness, using a round cutter of about ten centimeters, cut out 16 bases and place them into already greased muffin trays.

Into each base, put a tablespoon of mincemeat. Use the beaten egg to brush the edges of each pie.

Use a smaller cutter of about 7 centimeters and place the cut pastry on top of each base to seal.

Ensure that each tat’s filling is covered.

Use the beaten egg to glaze and sprinkle with caster sugar.

Cut out small sections in every pie to facilitate escaping of steam.

Bake the tarts in a preheated oven at 220°C for 15-20 minutes until the pies have fully risen and turned golden brown.

Generously dust using icing sugar before serving.
